Once the wheel diameter is entered, the machine's arm precisely aligns the cheese relative to the cutting die. The CNC system guides the movement to ensure even load distribution on the blades. Yes. The SIGMA is designed for continuous operation in large cheesemaking plants. Average throughput is up to 2 tons per shift, while maintaining consistent repeatability and minimal downtime. The structure is made entirely of stainless steel, compliant with hygiene standards for plants with a high level of sanitary requirements.
